These crispy air fryer potato wedges always come out PERFECT. I make them at least once a week as an addition to my dinners or meal prep. I use a par boil technique in this recipe. It’s a technique I learned a while ago, for making traditional roast potatoes. But I have adapted it to make it a lot healthier. More importantly this method is much faster and in my opinion.. much tastier. Cooking in the air fryer means that use waaaay less oil or grease, which is always a bonus if you’re looking to be healthy as possible!
Which potatoes for crispy air fryer wedges?
For this specific recipe I like to use regular ol’ russet potatoes! But that doesn’t mean you can’t use other kinds of potatoes. I’ve tried the same thing with yellow potatoes and they come out great! so don’t feel like you can’t try this recipe with whatever potatoes you have in your kitchen.

Crispy Air fryer Potato Wedges
Equipment
- 1 air fryer
Ingredients
- 3 large potatoes
- 1 tsp olive oil
- 1 tsp salt
Instructions
- Slice your potatoes into about 1 inch thick wedges, 1 inch at the thickest point. I normally cut them into 8'ths or 6'ths.
- Set a large pan of water to boil. Once boiling add all the potatoes in and boil for 10 minutes.
- Once the potatoes are starting to get soft. You want to drain the water. They shouldn't be all the way soft, just on the top layer of the wedges.
- put the wedges back into the pot and shake them around. This is to distribute flakes of potato that seperate becuase of the boiling process. It gives and extra crispy texure after air frying.
- Drizzle over oil and lightly salt the wedgesthen toss them lightly again to coat
- set the air fryer to 375 for 25 minutes. Place in the Wedges
- every 5 minutes, toss the wedges in the air fryer. I pull out the air fryer tray by the handle and shake them around without touching them.
- do this until the wedges are browned and crispy all over
